On a clean surface, counter top or table, create a volcano with 2 cups of flour. Sprinkle 1 tablespoon of Turmeric, and a pinch of salt and pepper in center of volcano. Add 1 tablespoon water, 1 teaspoon olive oil and 3 lightly beaten eggs. Start mixing ingredients, adding flour or water in small amounts if needed. Make a ball consistent to a dough ball and avoid dough sticking to the counter. Knead dough ball until it has a smooth texture. Cover and set aside for ½ hour. Then cut into 4 pieces, take each piece and roll it out using a rolling pin or wine bottle. Use a pizza cutter or knife to cut into ¼ or ½ inch strips and lay on another part of the counter to prevent sticking.
In a large stock pot, bring water to a boil. Once the water begins to boil, drop pasta in and stir gently. Fresh pasta cooks faster, so watch it carefully. Taste test when ready, top with sauce, and don’t forget the cheese! Serve and enjoy!
